Timilia is an ancient wheat variety that has been cultivated in Sicily since around 1300. The grain is gently stoneground at low temperatures into whole grain semolina in Modica, Sicily. The valuable nutrients and fine aromas of the grain are retained in the flour in this method. This gourmet semolina is perfect for cooking as well as baking.
