Ruscio or Russieddru is also known as Russello wheat. It is one of the oldest varieties of wheat grown in Sicily. This grain is gently stoneground at low temperatures into whole grain semolina in Modica, Sicily. This method retains the valuable nutrients and aromas of the grain in the flour which is suitable for cooking as well as baking.
