Description
Organic barley baking malt contains active enzymes that makes it ideal for baking bread and other pastries with regular wheat flour (rye or wholemeal flour already contains many enzymes - the addition of enzyme-active baking malt could make the dough too slippery).
The addition of baking malt to dough made with regular wheat flour offers the following advantages:
- The dough matures better and results in a higher rise.
- The crumb stays particularly moist.
- The crust stays fresh and crisp for a long time.
- Bakes goods stay fresh for longer.
How to use: Add this baking malt as specified in your recipe. Bake Affair recommends adding 20 g barley baking malt to 1 kg flour for the best result.
