Description
At Mulino Sobrino, whole grain flours rom regional organic grains are ground using traditional methods at a historic natural stone mill.
Whole grain durum wheat flour contains all the components of the wheat grain, including the valuable germ and the bran (the outer layer of the grain) and therefore has a particularly high proportion of fibre, minerals and vitamins.
Outside of Italy, durum wheat flour is not as common as the well-known durum wheat semolina. The difference lies in the degree of grinding, which is not as fine in semolina as it is in flour.
Durum wheat tastes heartier than the more common soft wheat. Durum wheat flour is particularly suitable for Italian cuisine. It can be used to make pasta dough, gnocchi, pizza or shortcrust pastry.
