Recipe: Subji with Carrots

What is Subji?

Subji is a Hindi word that means "vegetables" and can also be used to describe vegetable-based dishes. It can be used for practically any vegetarian dish that mainly contains vegetables. Subji can describe a dry dish, a liquid or a curry.

Ingredients

  • 125 ml of water
  • 8 medium-sized carrots
  • 2 cloves of garlic, chopped
  • 2 tbsp coconut, unsweetened, crushed or dried
  • 1 handful of fresh coriander, chopped or dried
  • 1-2 small, green chilies, chopped
  • 1 piece of fresh ginger (about 4 cm), chopped
  • 1 teaspoon ghee
  • ½ teaspoon mustard seeds
  • ½ teaspoon caraway seeds
  • ¼ teaspoon salt
  • 1 pinch of asante powder

Preparation

  1. Wash the carrots then cut them into small pieces.
  2. Mix the water, chilli, coriander, garlic and coconut with a hand mixer until they form a smooth liquid.
  3. Add the ghee, cumin, asante powder and mustard seeds to a heated pan and toast everything until the seeds puff up. Then add the liquid and season everything with salt.
  4. Lastly, add the carrots and simmer over medium heat, stirring frequently, until the carrots are tender. (Add more water if necessary.)
  5. Enjoy.
