Description
Estragon gives off a mildly spicy, slightly floral scent that is reminiscent of anise and fennel. The mildly spicy flavor is complemented by a sweet basil note.
Tips & Preparation:
Without tarragon, the flavors of mustard and vinegar wouldn't hardly have the same charm. For these reasons, tarragon is indispensable in French cuisine and spices traditional dishes such as Bérnaise sauce. It is also a wonderful addition to chicken recipes, such as tarragon chicken, fish and white meats. Used sparingly, it also has a distinctive flavor when added to green salads. Asparagus, cucumber or vegetable stews are also improved with a hint of tarragon. Tip: use sparingly, the smell and the taste of tarragon develop slowly.
