Description
These long flat egg pasta are called Paglia e Fieno or straw and hay because of their two colours - green and yellow. The colours and flavours create an appealing contrast when served. As the pasta contains a large proportion of eggs, it is extremely aromatic and can be prepared very easily. A little butter, sage and parmesan are all that's needed for a delicious meal. Alternatively, serve with a few sauteed porcini mushrooms.
Cooking time: 5-7 minutes.
