Pasta Recipes for Pasta Lovers
Boiling pasta in salted water and eating it with a sauce is generally referred to as a "Pastasciutta". Regardless of what you call it, we know you like to get your pasta an. Here's four pasta recipes to get you started.
"Spaghetti aglio, olio e peperoncino"
Spaghetti with olive oil, garlic and hot peppers
This Italian classic is one of the easiest and quickest recipes to make :)
Ingredients for 4 people:
- 400g spaghetti
- 100 ml extra virgin olive oil
- 2 cloves of garlic
- 2 hot chillies (chilies)
- salt
- chopped parsley (optional)
Preparation:
- Add the spaghetti to a large pot of salted boiling water and boil for 8 -10 minutes, until the noodles are al dente.
- In the meantime, chop the garlic cloves and chillies into small pieces. Heat the olive oil in a pan on medium heat, then add the garlic and fry until translucent, stirring regularly. Next, briefly fry the chillies.
- Remove the garlic (or not, depending on your taste) and add the cooked spaghetti into the pan.
- Before serving, sprinkle with parsley.
Spaghetti all'Amatriciana
Ingredients for 2 servings:
- 250g spaghetti
- 150 g pancetta (or bacon)
- 1 onion
- 1 can of tomatoes
- 2 tablespoons olive oil
- 1 tablespoon chopped parsley
- 1 chili pepper (dried)
- salt
- pepper
Preparation:
- Add the spaghetti to a large pot of salted boiling water and boil for 8 -10 minutes, until the noodles are al dente.
- Finely dice the pancetta and onion. Heat 2 tablespoons of olive oil in a pan and add the diced ingredients to the pan. Fry until brown over medium heat, constantly stirring.
- Add the tomatoes and cook for 15 minutes (do not use too much heat and stir frequently). Season the sauce with the finely chopped chillis, salt, pepper.
- Take off of heat and stir in the parsley.
- Serve with the spaghetti.
Spaghetti alla Bolognese
Interesting fact: Spaghetti Bolognese is not an Italian invention. In Italy, people eat ragù alla bolognese, which is the sauce. As the recipe was shared, people added noodles to it. Whether you want to eat this recipe with noodles or not is up to you!
Ingredients:
- 300g coarsely minced beef
- 300 g peeled tomatoes
- 150g pancetta
- 50 g carrot
- 50 g celery
- 50 g onion
- 1/2 cup dry white wine
- 1/2 cup whole milk
- vegetable stock
- olive oil
- salt
- pepper
Preparation:
- Dice the onions, carrots, celery and finely and let fry with 3 tablespoons of olive oil in a pan. Add the meat and fry, stirring constantly, until the vegetables turn brown. Add the white wine and wait until the liquid has evaporated.
- Next add the tomatoes and a little vegetable stock. Simmer the sauce covered for about two hours, stirring occasionally.
- Towards the end of cooking, add the milk to slightly mitigate the acidity of the tomatoes and season with salt & pepper. Serve hot.
Spaghetti Carbonara
Ingredients for 4 portions:
- 400g spaghetti
- 200g pancetta or bacon
- 200 ml whipped cream
- 80 g Pecorino (hard cheese)
- 4 egg yolks
- 2 tablespoons olive oil
- salt
- pepper
Preparation:
- Add the spaghetti to a large pot of salted boiling water and boil for 8 -10 minutes, until the noodles are al dente.
- Dice the bacon and fry it in olive oil, then let it cool slightly. Grate the Pecorino cheese and separate the egg yolks. Blend the whipped cream, pecorino and egg yolks together and add salt and pepper to taste.
- Mix the pasta with the bacon. Wait until the noodles not steaming, then pour the egg mixture over them and mix well. If the consistency is not liquid enough, add some of the pasta water to the dish.
- Serve with pecorino and pepper.
There are many ways to cook spaghetti alla carbonara. Some use ham instead of bacon, others say whipped cream doesn't belong in this recipe. We say: cook this recipe exactly how you would like it.
