Fink's Recipe Tip: Fried Loin Roast
Rub the cleaned sirloin with salt, pepper and hot mustard and tie with kitchen string to shape. Heat olive oil in a pan and sauté the filet and together with shallots and garlic. Heat the oven to 190 °C and cook for about 15 minutes. Marinade from time to time with the drippings. Cover fillet with aluminum foil, let rest about 10 minutes. Mix butter with rosemary and beat until foamy, then add black walnuts in slices and balsamic vinegar and slightly caramelize. If necessary, marinate with stock. Finally cut the kitchen string.
