Arche Naturküche Organic Sushi Rice, 500 g

Organic Sushi Rice by Arche does not come from Japan, but from Italy. The organic Selenio short grain rice grown there is ideal for nigiri and maki sushi. The round, fine grains of rice stick together and swell when cooked. This rice is stickier than other varieties of rice and is ideal for sushi. It is also delicious with curries and stir fries.

Preparing rice for sushi (makes approx. 350 g finished rice):

1. Wash 1 cup (= 150 g) sushi rice thoroughly. To do this, put the rice in a bowl, pour cold water over it and wash the rice. Strain through a sieve. Repeat this process until the water runs clear.
2. Add 1¾ cup water to the washed and drained rice in a pot. Cover and bring to the boil.
3. Turn down the heat and simmer gently for about 10 minutes.
4. Take it off the stove and let it rest for 10 minutes.
5. Season the rice with 2½ tablespoons rice vinegar, 1½ tablespoons sugar and 1 teaspoon salt.
