Description

An easily digestible flour made from unroasted organic chickpeas that is naturally gluten-free and rich in proteins and fibre. The nutty-sweet taste of the chickpeas is retained in the flour. Ideal for giving a rounded, full-bodied flavour to pancakes, falafels or sweet laddu (see recipe below) preparations. It is also ideal as a thickener for soups and sauces.

Recipe for Laddu (Indian sweet treats)

Ingredients:
50 g finely ground sugar (e.g. coconut blossom sugar, cane sugar)
75 g fat (e.g. coconut oil, butter or ghee)
100 g chickpea flour
1 pinch of sea salt

1. Heat the fat/oil in a pan and gently melt the sugar, stirring frequently. Mix in the chickpea flour and salt, continue to roast the mixture for about 3 minutes. Keep stirring until you get a hearty, nutty aroma. Be careful not to let it get dark or burn!

2. Then spread it out on a flat mould (such as a silicone mould) and let it cool down. Then turn it out and cut into bite-sized pieces. Tip: If the mass is still quite crumbly when warm, kneading vigorously with your hands for a couple of minutes will help. The perfect consistency is somewhat similar to marzipan - just a little coarser and less sticky.

3. Store the laddus in an airtight container in the fridge, they will keep for several weeks!

4. Those who like to experiment can add sweet spices such as cardamom, clove or cinnamon powder. A little rose water or toasted sesame seeds are also commonly added.
